It has been a fun, exhausting, crazy week at our house.

This picture seems to fit my state of mind – a little bit crazy.

The reason for the craziness is a new puppy addition to the family.
He is a sweetheart, yet all energetic puppy.

I did manage to get a couple new food items for you this week.

My first one may sound odd, fried eggs and noodles, Recipe here.  It is different, and I have really enjoyed it since I found the recipe, even if I don’t always have all of the ingredients.  I did overcook the eggs this time, I generally cook with more yolk so it mixes with the noodles like a sauce.  My overcooking them still works out for me to say that if you like your fried eggs with the yolk cooked all the way through this still tastes good.

My changes-  cooked the noodles, fried the eggs in butter and olive oil.  Once noodles are done, drain, melt 2 tablespoons butter in a pan, put garlic in on medium heat to release the garlic flavor into the butter.  Toss in noodles, mix, then put eggs on top.  Salt and pepper to taste.

My next fun was finally making pizza in a cast iron skillet.  I wanted to make this meal with my fresh made crust for the first time.  Although I was tired and it was Valentine’s Day, so I took the easy route and used Chef Boyardee Pizza Kit

The kit had enough dough for 2 pizza’s.  It is very easy to make, and turned out really good.  I spread minced garlic over the dough.  Then added toppings of pepperoni and ham for one, pineapple, ham and onion on the other.  Topped them with oregano and of course lots of cheese.

It wasn’t the prettiest pizza, although it tasted really good.  The dough had a slight crisp on the bottom that I like.   I topped with grated parmesan cheese.

Always enjoy the fun of food.  Even if you are feeling a little bit crazy.
