Enchilada Bake is one of our family favorites, I finally got some good pictures.  This is a super easy meal.  If you like chicken, beef, pork, or just beans it is easy to create.  I layer flour tortilla cheese, another tortilla.  Then meat or beans, then again with tortilla, cheese, tortilla then meat or beans. I always top with a tortilla and cheese last.  Bake at 300 degrees until warm and cheese melted.

We have a little Farmers Market at a local pizza shop The Hub.  I was happy to find cilantro, avocado’s, mangos, tomatoes and lettuce to go with dinner.  I made up some fresh guacamole and mango salsa.  Unfortunately I was so excited about those I forgot about my lettuce.

Pizza, Pizza – I still don’t know why I don’t make it more often.  Cooking it in cast iron is easy, and the crust turns out really nice.

The guys had a meat pizza, pepperoni, sausage, ham and bacon.

I had what started off as just chicken alfredo.  Then I remembered I had mushrooms and onions, so I sliced them really thin, sautéed in butter and garlic, then added some marsala.  Simmered and reduced it down.

Put that over the chicken and cheese, once it was baked topped with bacon and chives. With a side of fresh mozzarella and extra alfredo sauce.

Easy chicken parmesan.  I purchased breaded chicken from Alison’s Pantry, easy to cook up in the oven while I was finishing up yard work.  Made the noodles, just 5 minutes cook time since they would finish cooking in the oven.  Mixed in sauce, topped with chicken and cheese, baked at 300 degrees for about 15 minutes until the cheese was melted.

Crock pot meals, or easy prep freezer meals for the crock pot are becoming my favorite things.  Good for busy days, or lazy days.  A good healthy meal with little work,  ready when you are ready.
