Happy Weekly Food Fun to you!
It was a slow week of cooking for me. We had our Monthly Food Group Gathering at The Pizza Cart, which created yummy leftovers. The weather is getting warm, so our local food trucks are able to get out and about. And one birthday meal plan had several recipes in it. And, well, due to a rice trial an additional recipe was used.
My plan was Jambalaya with chicken, shrimp and sausage with a recipe from The Gumbo Pages. Recipe here.
It started out beautiful sauteing the “trinity”
Going through the recipe everything cooking and seasoning layer by layer. Now time for the rice. I should have known better. I was gong to cook it in the pressure cooker then add it to the recipe. Although recommendations are to cook it in the sauce so the rice absorbs more flavor, I opted for cooking it in the sauce. 45 minutes bubbling away on the stove, adding more liquid, rice still isn’t cooked. I bring out the pressure cooker, 20 minutes in the pressure cooker, it should seriously be cooked by now. It seriously wasn’t. So after close to three hours of cooking and rice burnt in the pot, dinner plans had to change.
Luckily I didn’t put the shrimp or sausage in the jambalaya so they were safe. And because I couldn’t decide what to make the night before I had made up some grit cakes. So the main dish was Shrimp, Sausage and Grits with a Cream Sauce. Based on a recipe from Bon Appetit. Recipe here.
The side was Shrimp Tikka with fresh Mango Chutney, I added grilled scallops to this because it sounded good. Recipe here.

Pulled pork sandwich, topped with barbecue sauce and coleslaw.
Loaded nachos, topped with cheese, baked beans, pulled pork and barbecue sauce.
Hot Links, a little spice to them with sides of baked beans and potato salad.

Souvlaki (kabob) chicken.
Loaded Greek Fries-
This is my breakfast fun with leftover loaded greek fries. The fries stay crispy and good. So I heat them up in a skillet and top with fried eggs.
