This week was a mix of standards,  and a new adventure with shrimp.

tatortotcassA family favorite of ours is tater tot casserole.  I generally cook it in the crock pot, one it is easy, and two the flavors seem to mix well.  Although, this week I had a different plan for the ground beef and as I started to get dinner ingredients out I changed my mind to making this casserole.  Since there wasn’t enough time for the crock pot, I went to the next best thing, cooking in the cast iron skillet.  I must admit it is really good this way, heated the pan with lard and browned the tater tots to a nice crisp all around. Added cooked ground beef, sauce (cream of mushroom soup, sour cream, garlic herbs and spices) and baked it.  Once warmed added the cheese to melt.

Garbage Disposal Silence (Part 2)

There is nothing good about Garbage Disposal Silence.

Morning has arrived, still not enough coffee to be content, but I know I can not delay any longer.  If the garbage disposal isn’t fixed, there will be much more work to be done through the day.  Teamwork truly is fantastic.  My Husband knew about a tiny fuse on the bottom of the disposal and was able to get the electricity working again before heading off to work.  I in turn, knew about the fun little magical tool left under the sink when the disposal was installed.    It is sort of like a hex tool, fits to the bottom of the disposal, so “if” or in my case “when” you get something stuck in the disposal you can hopefully dislodge it.  You use the tool to manually turn the disposal to move whatever is stuck in it.

So I am back…  been in Sickland.  So not Disneyland or beyond, nothing fun, but sickness.    Finally feeling better from the cough and congestion, only to throw my back out.  And not from doing something great.  But from coughing.  I don’t even know how that is possible, but it is.  And I know some of you out there can relate.  Sometimes going through the simplest of daily tasks, one day your back says “NOT TODAY” and you are struck down.

So yes. Torment is the word for the chicken tonight.

This morning I knew I was going to make chicken, and it just so happens I have ham and mozzarella cheese. Whoohoo! I love making a chicken roll up so to speak.  Flatten the chicken, layer on garlic, salt, pepper, ham, mozzarella cheese, roll, sear and bake.
