I generally don’t eat many salads, although with the warm summer weather all I am wanting is cold food and salads.  So, I am going with it.  After all summer is the season for fresh veggies at our local farmers markets and from my garden.

Mediterranean Monday – Crock Pot Chicken Thighs with Artichokes and Sun Dried Tomatoes
