Friday Favorite – Keto Butter Chicken and Low Carb Naan Bread
Welcome to Friday Favorite!
On Fridays I share a favorite of mine, it may be a recipe,
a spice, a technique, or a kitchen product I enjoy.
This week had to be a recipe combination. I am thankful to some friends sharing Indian food, recipies and techniques with me. The care for fresh ingredients, taking time with the recipes each flavor and layer of spice and ingredient just keeps adding to the others. Although, when I started eating low carb, keto in 2018 I thought I would miss out on a favorite. When I discovered KetoConnect I found that no, I wouldnt have to miss out. I do plan my whole day of eating around this one meal so I stay on track, yet that is never an issue because this is so good! The cauliflower rice is good, I made it the first time, although I tend to skip it now. I just want the chicken all that creamy yummy sauce and the Keto Naan Bread.

Thirsty Thursday – Mint Water
Welcome to Thirsty Thursday where I search out and share different twists on drinks. We all need to drink water, although we all know it can be boring. I do love icy cold water, although I know plenty that don’t like water. So, I will be searching out fun ideas to get the needed water intake with a twist of something.
Today’s recipe is something I have had end enjoyed, and now that the weather is warmer an the mint is abundant and happy in the garden I can start making it again. Later in the garden season I love adding cucumber fresh from the garden.

Willpower Wednesday! Easy Pesto Chicken Recipe
Welcome to Willpower Wednesday!
No matter what your weekly goals are, once we start to get tired our willpower can fade. We can easily plop down on the couch, or reach for some bad food choices. So, my Willpower Wednesday posts will focus on a quick easy, healthy food option.
Our family generally has chicken two to three times a week, sometimes more. And yes, some weeks I get bored. I absolutely love basil.. I think I could truly grow a quarter acre of basil and not have enough. Finding this recipe with a basil pesto will certainly be a mid week pick me up for my chicken bordom.

Taste Test Tuesday – Zesty Marinated Mushrooms
Welcome to Taste Test Tuesday, each week I will be searching out a new recipe, or maybe stepping out of my comfort zone to try something new.
The past week I have been enjoying mushrooms. Cooked, raw, and marinated I purchased at our local grocery. So, I decided to find a marinated mushroom recipe and give it a try. The herbs sounded good in this one. Although, I am not going thru the whole canning process. I will be just doing more like refrigerator overnight pickles and see how it goes.

Daily Recipe Find – Keto Green Chile Chicken
This has now become one of my go to easy chicken recipes.
I have never cooked with green chilies so wasn’t sure how I would like it.
They add a great flavor, and of course I love a creamy cheesy sauce.
The chilies aren’t spicy, although you could add some spice with your favorite spicy pepper.
I do like to cut my chicken into bite size pieces because I have to surround each bite with that sauce! Enjoy!

Daily Recipe Find – Cream Cheese Spinach Stuffed Chicken
Chicken is always in my freezer because I like it, it is versatile, quick and easy to cook up.
I have my favorite recipes that I generally cook each week.
Although, sometimes I need to try something new so I don’t get bored.

Happy First Day of Spring!
Smiles and Trials of the Day
Smiles – It has been wonderful warm weather, and yes… I consider in the 50’s and sunny wonderful warm weather. Having local farms near by is truly fantastic. This morning I saw they welcomed a new Spring Day calf, and fresh picked spinach, there was no other option than to go for a visit.
Now that I have fresh spinach in hand I have to change my dinner plans. I decided on creamed spinach and baked pork chops. A wonderful treat.
Trials – Our good weather is on the way out. Rain and possibly snow on the way, and I am ready to be done with the snow.
It truly is a welcome to Spring.
50’s one day, snow the next.
Yet through it all life springing up all around us.

Smiles and Trials of the Day – Cold
Today was a freezing day for me.
I have them every so often.
Plus the fact it is cold outside and snow moving in doesn’t help.
Food is always a comfort,
so through my freezing I planned creamy ,spicy, comfort dinner.

I always make their Naan bread with it,
with plenty of leftover bread for breakfast sandwich in the morning.
And yes, I do like garlic in my breakfast foods.

Smiles and Trials of the Day – Pizza
Can there be any trials when Pizza is involved???
Well, of course it can get burned..
Although today was all smiles.
Especially since I had some Italian Sausage in the fridge and decided to add that to my toppings.
Ranch dressing as the sauce,
chicken, italian sausage, bacon,
caramelized onions, and fresh mozzarella.
Fathead Pizza Dough – recipe here. I do add some onion powder, garlic and oregano.
I divide the dough into 3 mini pizzas and cook each in a small cast iron skillet.
