Daily Recipe Find – Roasted Sweet Potato with Chickpeas, Goat Cheese and Coriander
Since Thanksgiving is around the corner, you may have a few extra sweet potatoes around to make a treat. I love goat cheese, if you don’t, then give another light cheese a try, even cream cheese would probably work in this. Enjoy!

Daily Recipe Find – First Snow of the Season Means Chili and Cornbread
No matter how not ready I think I am for the first snow of the season, it still is a beautiful sight.
My tradition on our first snow is always a big pot of chili in the crock pot and a batch of cornbread.
I add smoked paprika and cheddar cheese to the cornbread.
The chili is topped with the crumbled cornbread, cheddar cheese, onions and my greek yogurt.
Welcome to Winter.

Daily Recipe Find – Skillet Basil Cream Chicken
Skillet meals are generally on the easy and quick scale, this looks really good. And yes, I admit I had to look up what boursin cheese was, it is a soft creamy cheese similar to cream cheese. And yes, I suppose that could be a big hint for me, yes I will be using cream cheese for this since that is what I have in the refrigerator. Enjoy!

I love taking pictures, and I love a challenge to capture an event that may only happen once in my lifetime. I have spent many times waiting and waiting, total focus and preparation, and have succeeded in capturing some pretty good pictures and had fun in the process.
Sadly or maybe thankfully this was not one of those times. I was excited to get pictures, although got sidetracked with family matters, and cooking dinner. Looked out the kitchen window and oh…oh…oh…. hurry, get the camera, change out the lens, get the tripod and set up.

Daily Recipe Find – 10 Tasty “freezer dump” Crock Pot Recipes
Having an easy dinner ready to go into the crock pot is a great thing, especially if it is dump and go ready. Sadly as much as I say how good this idea is I haven’t done this yet. The most I have done is a crock pot full of chicken, then I shredded it and froze it. These recipes are even easier because the prep work is done before freezing. It will take some time chopping and putting the ingredients together, although looking through the recipes, there are several common ingredients.
It can also be intimidating or not budget friendly to buy enough food for many different meals all in one grocery trip. These recipes are helpful using canned goods, fresh veggies, and meats. So you could easily spread out the ingredients list into different shopping trips, then put them all together when ready. Also, since you will be freezing it anyway as you buy meats slice, prep and freeze to be ready to be put into the big bag for the whole meal.

I did a quick list of the main items on these ten recipes. I am really going to try to make ahead a variety of different meals to get out of the same old…same old meals. I am putting the list on a recipe box to make grocery shopping easier for me. Hopefully it will help you too. - 2 cups bacon

- 12-14 oz kielbasa
- 1 pound stew meat
- 2.5 pound pork shoulder roast
- .. VEGETABLES ..
- 3 bell pepper
- 7 onions
- 2 pound carrots (estimate, recipes ½ lb/ 2 cups / 2 carrots)
- 1 bunch of celery (estimate, recipes = 2 cups plus 1 rib of celery)
- 1 pound baby bella mushrooms
- 1 pound split peas
- .. CANNED GOODS ..
- 2 cans cream of chicken soup
- 28 oz of crushed tomatoes
- 15 oz can of tomato sauce
- 15 oz can of diced tomatoes
- 15 oz canned whole cranberry sauce
- .. MISC ITEMS ..
- 2 cups lentils
- honey
- 1 lime
- 1 packet italian dressing mix
- chicken bullion
- 1 packet sloppy joe seasoning
- 8 oz cream cheese
- ½ cup apple juice
- beef stock base
And don’t forget to mark on the bags what it is, how long to cook in the crock pot and at what temperature.
