As we are all pretty much stuck in the house, some baking stress relief was in order.
I have made this recipe from just banana’s 3, and this one has one banana, although that really is just an option. I didn’t want the last one to go to waste.. so I threw it in. Realistically this is a great low carb base for bread, you can throw in multiple chopped fruits, just know the carbs and counts will change. All nutritional information is based on My Fitness Pal and can vary depending on ingredients.
When using coconut flour and almond flour, DO NOT skip the xanthan gum!
This is key to keeping the bread from just crumbling apart.

- DRY INGREDIENTS -
- 1 cup Almond Flour
- ½ cup Coconut Flour
- ¼ cup monk fruit sweetener
- 1 tsp cinnamon
- 1 tsp cardamom
- ¼ tsp nutmeg
- 1 tsp baking powder
- 1 tsp xanthan gum
- LIQUID INGREDIENTS -
- 3 large eggs
- 2 Tbs melted butter
- 1 ripe banana
- 1 tsp of vanilla
- FINAL INGREDIENT -
- ¾ cup blueberries
- Preheat the oven to 350 degrees F
- Combine all of the dry ingredients in a bowl.
- In second bowl, using an electric mixer combine the liquid ingredients until smooth.
- Pour the dry ingredients into the liquid ingredients and combine with the electric mixer.
- Last step gently stir in the blueberries.
- Pour into a greased 10" x 6" bread pan (you can coat with a cooking spray, or butter)
- Bake at 350 degrees F for 30 minutes.
- After 30 minutes cover the bread with aluminum foil to prevent burning and cook for 10 more minutes.
- Let the bread cool then slice and enjoy!
