Weekly Meal Prep 2020 W5

Welcome back!
Finishing up the first month of the year.
My meal prep supply is going well, after using some of my prep meals
I still have eleven meals in the freezer.

CHICKEN – This week breaking out the air fryer.  I use a Gourmia 5 qt. (Amazon link here)   Tandoori Chicken from Two Sleevers. (Recipe Link Here) I truly enjoy any and all adventures into different seasonings and blends.  This recipe is definitely in my favorite list from now on and I am so glad I gave it a try.  Even though I have had my air fryer for over a year, I am still learning all it has to offer.  My entire kitchen was filled with the scent of garlic and spices.  The best air freshener really is fresh herbs and food.  The chicken wasn’t dry and yet had little crispy edges and bursting with deep flavors, then the finishing touch of a brushing of butter, herbs and lemon juice before serving was wonderful.  I didn’t even make a vegetable to go with it.  It cooked quickly, and the smell, I just wanted nothing but the chicken, no distractions of flavors, just wonderful chicken.

PORK – A little spice up with pork this week.  I never buy ground pork, although of course I have pork sirloin roast in the freezer from grocery sales.  So for this recipe I am going to slice it really thin.  This weeks recipe thanks to Ketovale – Keto Thai Basil and Pork Stir Fry.  (recipe link here).

GROUND BEEF – We have a winter storm on the way, and a snow day means chili.  Making it lower carb so I don’t include beans, which surprisingly I don’t miss.  Although what I did miss was cornbread.  Many thanks to KetoConnect for their recipe.  Low Carb Cornbread / Baby Corn and Cheddar (recipe link here)

SNACKS – Since it is Super Bowl Sunday snacks will be in order.  I usually don’t have a ton of interest in the game, yet I do enjoy watching it, and most of all I enjoy the snacks.   My snack plan:  Deviled Eggs-  I make a big batch and spice some of them up.  Mix some up with sriracha or wasabi.. or both.  Will see how I feel.  Then cheese and lunch meat with some herb filled avocado oil to dip.  Then some sandwich wraps with low carb tortillas. Easy, comfort finger foods relax and enjoy with no snack guilt.
