Sushi Sunday time again!
This month was my own sushi adventure.
I didn’t have a wide variety of supplies, although sometimes simplicity still works out tasty.
My first adventure was a Spicy Shrimp Handroll –
I had some pre-cooked shrimp, so I just sautéed them with a little bit of sesame oil along with some thin slices of onion. Then added the spicy mayo (1/4 cup mayo, 2 teaspoons sriracha sauce and a couple drops of lime juice) I just heated them to a low boil just to heat and mix the flavors. Chilled, then rolled in a seaweed wrapper with rice, cilantro and a side of spicy mayo sauce.
Next up, Tempura Fried Spicy Shrimp Roll –
This roll took a few steps. First off I needed a tempura batter, recipe here. I dipped the shrimp in the batter and fried for a couple minutes on each side until lightly browned. Next flattened about 1/4 cup rice onto the seaweed wrapper, I dipped the tempura fried shrimp into the spicy mayo sauce, put it on top of the rice, then rolled it up. Dipped the roll into the tempura batter, then fried for a few minutes on each side. I topped the roll with fish eggs and sesame seeds with a side of spicy mayo.
The side dish, well, because I had enough tempura batter and didn’t want it to go to waste.
Tempura Shrimp and Onions
I really like the batter, it is light and crispy. I don’t have a deep fryer, so I just used my tiny cast iron skillet with about 1/2 inch of oil. Dipped and fried, with a side of soy sauce. Although after I took the picture and actually started eating I like the onions and shrimp dipped into the soy sauce, then into the spicy mayo. A mix of salty, spicy, creamy.
