Happy Food Fun time to you.
This was a short food fun week of cooking due to New Years. I celebrate the New Year with not cooking big meals. I buy and make up a bunch of snacks and our family enjoys them for a few days. I love to cook, although I like my little break of snacks. And, oddly enough I didn’t even take pictures.
I do want to share one of my favorite recipes, Chili’s Copycat Skillet Queso Recipe it does have a hefty spice, I use a little less chili powder when I make it. I mix it on the stove then put in a crock pot on low or warm setting for the day. The top can get a dry layer on it. I have found that if I put some water in the bottom of the crock pot. Then put the queso in a heat safe bowl, then place that in the water and cover it doesn’t dry out as much.
For the meals I did cook they were creamy and pasta good.
Crockpot Ranch Chicken – from Baking Outside the Box, recipe here. I did edit the side to go with it. Instead of cauliflower I used potatoes. I cube the potatoes, this time I used red potatoes so I left the skin on. Place in the bottom of the crock pot. Then layer in the chicken, ranch dressing mix, butter and cream cheese mixture.
Italian Baked Chicken – from Food Network, recipe here. I again modified for what our family likes. Instead of diced tomatoes I used tomato sauce. I really liked the crunchy topping.
