Kicking off February, after the Super Bowl snacking I will start off with some vegetable recipe finds.
I generally have the same vegetables in my freezer, broccoli, brussels sprouts cauliflower and green beans. I don’t have to worry about them going bad, and I know I will always have a supply ready to cook. So lets kick off February with some new vegetable ideas to dig out of veggie boredom along with some of us digging out of the snow.
BROCCOLI – I enjoy goat cheese and luckily we have a few local farms that sell it fresh. So this recipe from How Sweet Eats jumped out at me, Spicy Roasted Broccoli with Lemon Goat Cheese Drizzle. (recipe link here).
BRUSSELS SPROUTS – This is an interesting find. As I am freezing and in a winter wonderland soup is yummy on a…. well anytime. And if it includes bacon it is even better. Creamy Brussels Sprouts and Bacon Soup (recipe link here) from Sue at The View From Great Island. Since my brussels sprouts are frozen I am going to just defrost, and instead of chicken stock I am going to use my homemade smoked turkey stock I made from my smoked turkey at Thanksgiving. This is going to be a fun one to try this week.
CAULIFLOWER – I do make cauliflower several different ways so I really don’t get bored with it. Although searching out something new is never a bad thing. Many years ago I made Gnocci, once and only once. I did’t not make it again because it was bad, it was just a lenthly process I realized I didn’t want to do again. In my search for some new to share I found Cauliflower Gnocchi (recipe link here) from Molly Watson on The Spruce Eats. If you like spice and deep flavors this one should hit the spot. Thai Massaman Vegetarian Curry (recipe link here) from Darlene Schmidt on the Spruce Eats.
GREEN BEANS – My sad basic green beans, always butter, salt pepper. I never use any other seasoning and I should. This week I am going to pair this with some chicken. If you don’t use soy sauce, substitute Bragg Liquid Amino’s or Bragg Coconut Amino’s. Recipe thanks to Your Home Based Mom, Restaurant Style Easy Green Beans (recipe link here) I am looking forward to trying this. I love the deep flavor cooking with sesame oil gives to foods.
To go along with the veggies I have nothing different planned for meats, just my basic chicken and pork in the slow cooker. Always making a little extra to stick in the freezer for quick, easy, healthy meals.
