Friday Favorite – Easy Chicken Recipes

On Fridays I share a favorite of mine, it may be a recipe,
a spice, a technique, or a kitchen product I enjoy.

My August theme for Friday Favorites is going to be easy recipes.  Easy recipes are always great to have a nice stash of,  especially in August.  The last bit of Summer vacation before school starts, trying to organize when to be where, practice here and there, and getting used to the active school schedule again.  Or if you are retired, the weather is beautiful and you want to enjoy being outside instead of standing over the stove for dinner.

One of my favorite meal preps is to cook up 4 pounds of chicken breast each week.  Yes, we do eat a lot of chicken.  So I am always looking up new recipes to avoid my family getting bored.   I throw the boneless skinless chicken breast in the crock pot, add salt, pepper, garlic and onion powder along with a little water.  Let it cook on low for 6-8 hours.  Once it is done I put into a storage container in the refrigerator.  I have chicken all week long to mix in whatever sounds good.  I have also made it overnight, instead of during the day.  Which is nice because then lunch is ready that first day.  Keto Connect has 3 great recipes with rotisserie chicken.  So if you get a chicken from the market, or make a big batch like I do these are some simple recipes for a little variety.  The buffalo chicken dip is on my recipe list for this week.
