Willpower Wednesday – Keto Chicken Enchilada Bowl

No matter what your weekly goals are, once we start to get tired our willpower can fade. My Willpower Wednesday posts will focus on a quick easy, healthy food option.

My Mom and I have been on a spicy craze lately.  I think the warmer weather and sunshine thinking of fresh veggies and peppers from the garden our minds are in full swing wanting something spicy every meal.

When a recipe ends with “bowl”  yes this will be an easy go to.  This week I dont have chicken thighs, which of course gives more fat, I cooked up four pounds of chicken breast in the crock pot overnight to make up different meals thru the week.  It is a great food prep option to make whatever chicken meal sounds good, plus half the cooking is already done .  Long summer days I want to spend as much time outside as I can instead of standing over the stove.
