Willpower Wednesday – Coconut Curry Chicken

My Willpower Wednesday posts will focus on a quick easy, healthy food option.

This week isn’t the quickest recipe, although it is really good and a change up from same old chicken.   Most of the time is simmering on the stove.   So, while it is simmering on the stove, relax, put your feet up and enjoy the aroma of curry, cinnamon and ginger. It is the best air freshener, because you get to eat it.  I do add a few extra spices.  I enjoy the earthy flavor of tumeric, a little cardamom, plus I add a little pinch of hot chili powder.  The recipe truly is good just as in the recipe, yet I can never stick to a recipe and have my favorite spices I enjoy adding.
